Ingredients:
- 1 Cup Oats
- 1/2 Cup Coconut Flakes
- 1/2 Cup Flaked Almonds
- 1/2 Cup Pumpkin Seeds
- 1/4 Coconut Oil, melted
- 1/4 Cup Maple Syrup
- 1 tsp Salt
- 1 tsp Vanilla Paste
- 3 Tbsp Matcha Powder
Method:
- Preheat your oven to 160°C.
- Mix together the oats, coconut flakes, flaked almonds, matcha powder and salt until everything is well coated with the matcha powder.
- Add in the pumpkin seeds then give it another quick mix.
- Pour in the coconut oil, maple syrup and vanilla paste, Mix until everything is well combined.
- Pour onto a lined baking sheet, compact down with the back of a spoon then place in the oven for 15-20 minutes.
- Halfway through baking, give the granola a good toss and compact down again so it bakes evenly.
- Once you remove the granola from the oven, allow it to cool completely before breaking up the matcha granola into bite sized chunks.
- Serve with greek yogurt or milk of your choice.
